An Italian study involving 79 adults diagnosed with MASLD (metabolic dysfunction-associated steatotic liver disease) showed that daily tomato consumption can significantly reduce liver fat. Participants were divided into two groups: the first group ate 200 g of fresh tomatoes and 50 g of tomato sauce daily for six weeks, while the second group eliminated tomatoes from their diet. Results showed that the tomato-consuming group experienced an average CAP (controlled attenuation parameter) reduction of about 35 dB/m, compared to approximately 18 dB/m in the control group. No significant changes in weight, body mass index, or waist circumference were observed. The authors attribute the potential benefit to lycopene, a natural antioxidant that may reduce oxidative stress. However, researchers emphasize that the data are not definitive proof, and larger, longer-term studies are needed. Tomatoes should not be considered a standalone treatment for MASLD but rather part of a balanced diet.
